I decided to bake these tasty treats at Ronald McDonald House and share them with the household! (*See back to my #1 post concerning Ronald McDonald House!) I was very excited to try out this new recipe. My dear friend, Julia, also helped me bake these yummy cookies.
So, we were ready to bake away with our cute aprons on, very excited to make goodies for the families staying at RMH!
~Julia eager to bake away~
This is what the recipe called for:
- 3 cups flour
- 2/3 cup cocoa powder
- 1/2 t. baking soda
- 1 cup sugar
- 1 cup light brown sugar
- 1 cup softened salted butter
- 2 large eggs
- 2 cups miniature semisweet chocolate chips
- 8 oz. miniature marshmallows, frozen
So, we began to mix the required ingredients together...
~Gooey and full of chocolate flavor!~
This is what we did:
Preheated the oven to 400 degrees. In a medium bowl, we combined the flour, cocoa powder, and baking soda, then set aside. Next, we mixed the sugars together in a large bowl. Using an electric mixer (as you can see in the picture), we then blended in the butter with the sugars. Next, we added the egg and vanilla; beating them together at a medium speed until light and fluffy. Then we added the flour mixture and chocolate chips, and then blended at a low speed until combined. We found that the batter was very stiff, but this is how it is supposed to be. It smelled SO good!! Next, we were ready to get our fingers messy. We wrapped a heaping tablespoonful of the dough around 4-5 frozen marshmallows. We found that even just 3 small marshmallows worked well. We then placed the cookie balls on an ungreased baking sheet, keeping about 2 inches apart.
~lookin' good!~
The cookies need to bake for about 8-10 minutes, but we found that even just 7 minutes was good. Just keep a good eye on them and decide for yourself if they seem to be done. Remember that they will continue to cook when you take them out of the oven. After we took them out of the oven, we let them cool for a little bit on the pan, and then we placed them on a cookie rack.
~They smelled SO good!~
They were definitely gooey and smelled so amazing! :) Because they were soft and sticky, partly as a result of the marshmallows, we did have a few cookies that did not stay intact, but that's ok...they still tasted amazing. So, this is what we did with some of the cookies that didn't stay in their shape...
~Marshmallow Cloud cookies that didn't make the cut, a.k.a. cookie crumbs!
No cookie should go to waste!~
When all the cookies cooled, we placed them in a container in the kitchen where they could easily be reached by the hungry house guests.
~There are our Marshmallow Cloud cookies~
Julia and I had a wonderful time baking the tasty treats for Ronald McDonald House! What a blessing it is to bake for others and see their faces light up as they taste the goodies. It makes me so happy!
We will definitely be going back again to bake!
You should definitely try these wonderful cookies. They are worth the calories! ;)
